How did you come up with the name?

Boston is known for loving lobster.

What prompted you to start a food truck?

I love the hustle game.

What's on your food truck menu? Why did you choose this cuisine?

  • Lobster quesadillas.
  • Portuguese lobster chowder.
  • Smoked lobster tacos.
  • Truffle lobster mac and cheese.
  • Thai lobster fresh roll.

Do you make all the food on the truck, or do you use home-based kitchen or commissary space?

Most of the major preparations are done at the Early Bird restaurant and the finished work is done on the truck.

What's the best part of being a food truck operator?

The people watching is amazing. The food truck culture has to be one of the best things about running a truck.

What's the worst part of operating a food truck?

The weather sometimes can be a burden, other than that, food truck hustle is strong.

What lessons have you learned since launching the truck?

Like any business, there are unforeseen learning challenges. Making sure you service your truck regularly to avoid breakdowns. I've blown my fair number of tires and hoses. Great insurance is a must.

Is there anything you would have done differently at the start?

If money wasn't an issue, I would have built out a brand-new truck opposed to putting a brand-new kitchen on a tired truck.

Any tips/advice to others thinking of launching a food truck?

Create a brand and a cool menu that sets you apart from others, and hustle and network hard. Learn how to perform public speaking.

Do you have any anecdotes about running a food truck — any unique interactions or special events you've been booked at?

We specialize in divorce and bereavements! We also shoot tacos at people with a retrofitted potato gun.
