The SNSGOODIES Food Truck in O'Fallon, Missouri began as a team of two couples serving classic American fare like burgers and wings. Since then, the food truck has been through a lot, from the passing of one its members to learning many challenging lessons. These include how to handle the seasons as well as navigating different events, long lines and ticket times.
Through it all, food truck owners Norman Boozer and Darrius Harris recommend to "smile often!"

Do you operate brick-and-mortar locations under this brand as well? How many?

How did you come up with the name?
The name has evolved since inception. SNSGOODIES was originally formed with two couples (Darrius and Norma), (Nick and Nina) where the husbands were best friends. The S stood for Slim, first business partner childhood name, the N represented the wives in the business ( Norma and Nina), the last S represented Shavez, childhood name of the second business partner. Unfortunately, our business partner passed away and the meaning of the name evolved as well. Today, the N now represents Norma, and the last S represents sSignature sauces, in fact that Darrius makes all the sauces that we serve from scratch.
What prompted you to start a food truck?
Independence for one of the couples and secondary source of income and growth potential for both couples. Best friends met and grew up in the culinary industry.
What's on your food truck menu? Why did you choose this cuisine?
All entrees can be served with fries. The menu was created and designed with quick bar food in mind. Our menu also evolved as we originally started with hand-made stuffed burgers. We attended our first event at Sports Park in O'Fallon, Missouri and quickly realized that our pace of production was way too slow to be successful and profitable so our menu was revamped.
Do you make all the food on the truck or do you use home-based kitchen or commissary space?
We cook the food fresh at every event. We also have a commissary space in O'Fallon.
What's the best part of being a food truck operator?
Interacting with different people and new exciting experiences at every event.
What's the worst part of operating a food truck?
Time consuming, exhausting work!! You have to be extremely efficient to be productive in this industry.
What lessons have you learned since launching the truck?
Sooooo many!!!
Is there anything you would have done differently at the start?
Never started a food truck. Seriously, we would have done more research on the cost and expenses of running a truck and the commitment level necessary to be successful.
Any tips/advice to others thinking of launching a food truck?
Work on a truck before you commit and buy one. You can work on ours!!! Contact Norma.
Do you have any anecdotes about running a food truck — any unique interactions or special events you've been booked at?
We worked everything from super slow events to events where the line stretches so far you can't see the end. You can only work one ticket at a time, don't get lost in the length of the line, it just creates mistakes and errors and frustrated customers. Smile and laugh often!
