Some are people who recognize the demand for a certain food product and can’t resist the opportunity to capitalize on that market niche.

For a brick-and-mortar restaurant, a food truck offers a vehicle to market their brand, particularly in areas where customers may not be aware of the brand. Food trucks also offer restaurants a way to gain more off-site catering business, since the food truck can provide the catering service.
