To say it's been a rough year for Brad Matthews, owner of the Red Wagon and The Pantry food cart, would be an understatement.
First the pandemic closed his eatery inside the Aspen Recreation Center, then he suffered a hand burn and a bike accident.
But on the happy side he and his wife had a child, and he's pivoted his in-store eatery to a food cart that is being well received, according to an Aspen Times report.
The Red Wagon and The Pantry cart is situated on the parking lot outside the center, and Matthews is hoping to relaunch his physical eatery by summer.
The truck serves up french fries, burgers, cheesesteak sandwiches and falafel, and nothing on the menu is over $12.
