California food truck is all about indigenous flavors

The Pre-Hispanic Mexican Cuisine food truck offers something few other Mexican food operators provide — the flavors and ingredients that predate Spain's colonization of Mexico by over 10 decades.

The truck, which serves its fare in San Jose, California, is all about indigenous cooking, according to a KQED report.

Food truck owner and chef Jesus Varguez launched his business two years ago.

"Pre-Hispanic, for me," Varguez told the news outlet, "is a way to bring back what our ancient food tastes (were) like. I always had this interest to open my own restaurant to my tradition in the Yucatán peninsula. What I see from my grandma and [other] natives."
