Chicago food truck comes to Vail Valley, Colorado

The Chi Shack food truck has arrived in Vail Valley, Colorado. This truck serves Chicago-style hot dogs and other examples of Chicago street food, according to a report by Vail Daily.

Mark Ramos, owner said he has been involved in the restaurant business serving Chicago street food for his entire life.

"I ran Portillo's. For those of you who know, you know. It's iconic back home. I've done everything in the restaurant industry, I've done everything that I could do except to be my own boss," Ramos said in the report. "Then, I was at a crossroads and my wife looked at me and she said, 'Yeah, do it. Let's do the truck.' And we did it and it's been my dream."

The food truck features Italian sausage sandwich, cheese dogs, chili dogs and the Ditka Polish named after the Chicago Bears football coach Mike Ditka.

"The Ditka Polish is ridiculously big here," Ramos said. "And it's just delicious. We add grilled onions, sport peppers, a nice zigzag of mustard. It looks beautiful."
