Chicago food truck owner urges mayor to scrap overly restrictive rules

Laura Pekarik, owner of Courageous Bakery Café and the Cupcakes for Courage food truck, has penned an opinion piece in Crain's Chicago Business urging Chicago Mayor Lori Lightfoot to scrap the city's rule that prevents food trucks from operating within 200 feet of any business selling food and also requires food trucks to move every two hours.

Pekarik, who has sued the city over the law, claims Chicago is the only major city that has squelched the food truck industry.

Food trucks in Chicago have fallen from 127 in 2012, when the rules were enacted, to fewer than 80 today, Pekarik said.
