Colorado has streamlined food truck regulations. In particular, food trucks will only need one fire safety permit and health license that can be used throughout the state, according to a report by KKCO 11.
This replaces a previous rule where food trucks would need a fire safety and health license from each county they operated in. The state aims to reduce costs for food trucks and the health department.
"By the time you add up all the time that it takes to get the events and then get there and then have to have the inspections and then the cost of the inspections, I mean, we run on such a slim margin as it is that it all really adds up. Being able to have a one-time, said-and-done deal is going to be a huge help for all the food trucks," Dante Tripi, owner of Hawaii Street Foods, said in the report.
