Community center offers a food truck experience

The Grow Community Center, Café and Food Truck is open for business in Park City, Utah and the inclusion of a food truck was a specific initiative by its founders.

Amber Raleigh, co-founder and CEO of the center, said the idea to create a community place with a food truck option was borne from her days of being food insecure during the recession of 2008, according to a ParkRecord.com report.

"I didn't look like your typical food-insecure person, and I made a vow that I would do something some day that would not allow people to feel so vulnerable and helpless," Raleigh told the news outlet.

So she and partner COO Edj Fish developed the concept initially in Colorado four years ago. The founders decided to establish the same café approach in Park City after moving to the area three years ago.

"The pandemic actually created an opportunity for us to create a mobile cafe that can serve the community by traveling to and serving different areas," Raleigh told the news outlet.

The food truck offers a plant-based menu.
