Cousins Maine Lobster to bring 4 food trucks to Southwest

Cousins Maine Lobster, a fast casual lobster brand, plans to bring four food trucks to New Mexico, Texas and Arizona. This is part of a strategic effort to expand access to seafood in the Southwest, according to a press release.

Chris Wilson and Gary Andrew lead this effort, building on their recent success with two trucks in Lubbock, Texas. These trucks will offer Maine Lobster rolls, tacos, grilled cheese and whoopie pies. The first truck is set to launch in Albuquerque in May 2026, with the second coming to Phoenix in August 2026 and others opening in 2027 in El Paso, Texas, and Tucson, Arizona.

"After a strong debut with our first two trucks, we're eager to expand across multiple states and serve even more communities that can't get enough of Cousins Maine Lobster," Wilson said in the release. "It's been an honor to grow the brand's presence in West Texas, and we're thrilled to bring authentic Maine lobster and the hospitality Cousins is known for to Albuquerque, El Paso, Phoenix and Tucson."

Cousins Maine Lobster has expanded significantly in 2025, opening nearly 20 units in new markets such as Milwaukee, Wisconsin and Albany, New York.
