Denver, Colorado's food truck population has grown from 150 in 2010 to nearly 700 this year. The city estimates there could be as many as 750 licensed trucks by the end of the summer, according to a report by The Denver Channel.
Denver has attempted to make the license application easier. For example, every Friday, the Denver Department of Excise and Licenses conducts inspections on the spot and issues the licenses at the Denver Animal Shelter. Previously, food truck operators had to make four separate trips to different agencies to get a license.
"We have to work carefully to make sure we have sensible regulations that help protect the public and weave food trucks into the fabric of our community," Ashley Kilroy, Excise and Licenses, said in the report.
