Denver food truck fuses Middle Eastern, Mexican cuisines

Miguel Zavala-Duran, who runs the La Mesa food truck in Denver, loves Middle Eastern, Mediterranean and Mexican food and that's why his menu fuses all three cuisines.

Zavala-Duran, who is also a musician, got into the food truck business after helping out a friend who runs the Cilantro & Perejil truck, according to a Westword report.

The experience was so "cool," he kept working on the ruck inbetween his musician work. When the pandemic hit, and his music gigs faded fast, he decided to open his own truck.

"The pandemic was a wake-up call, because my livelihood was taken away," he told the news outlet. "I'm like, I need to do something. I'm forty years old, and I need to plan for the future."
