Entrepreneurs open food truck park in Evans, Colorado

Business partners Belen Diez Blazquez and Rolando Marroquin have opened The Yard at 3520, a food truck park in Evans, Colorado. The pair also have renovated a former restaurant at the property, which they acquired in August for $310,000, according to a report by The Greeley Tribune.

Marroquin and Diez plan to offer a variety of cuisines at the park. Joe Bergman, owner of the Average Joe's Grill and Chill food truck, has already parked his food truck at the location.

The food truck park will also feature live music, trivia contests, volleyball and open mic events. Marroquin and Blazquez have been partnering with local artists to adorn the walls of The Yard's main restaurant.

"We think food trucks are also a different kind of art," Marroquin told the Greeley Tribune. "More of a culinary art."
