Conference organizers are adding food trucks to events as mobile kitchens have become popular, according to a New York Times report. In some cases, organizers deliver the food truck experience without having an actual food truck.
Zoe Moore, a San Francisco area consultant who helps event organizers coordinate the logistics of using trucks, from vendor licenses to seating, said technology firms like food tucks since they provide a variety of food and the food is "hip."
A food truck also allows a hotel to avoid space constraints. Gates Hotel Key West, for example, operates its own food truck.
Chef Rashad Armstead, who coordinates food truck logistics for Oakland, California food trucks, works with operators to tailor menus for corporate clients. He created an outdoor area next to the Oakland Convention Center for food trucks and tents, and added seating for about 5,000 at a recent event.
