Those in Tampa Bay, Florida that love Peruvian food need to find their way to Meanchi's, a food truck inspired by the cuisine.

Owner Josh Varon told the Tampa Bay Times his food truck fare is all about tradition as well as offering a fast casual mindset and being creative.

The menu includes the best seller item, the Chicharron sandwich.

"My love for Peru, it's a love for Peruvian food," Varon told the news outlet. "It's Chinese, it's Japanese, it's indigenous, it's Spanish — it's extremely diverse and that's what I've always found so fascinating."

One menu item, the Carmencita, is named after his mother, Carmen, and features shredded chicken in a flavorful aji amarillo sauce paired with crunchy fried onions and cilantro.

"My goal is to push Peruvian food forward and get more people educated about it," Varon said. "Anything to get people to try Peruvian food, in general."
