The Taqueria Hernandez food truck, in Plant City, Florida, is being reborn as a way to honor its founding matriarch.

The truck had been operating for many years, serving up Mexican fare, but closed when one of the owners passed from cancer at the start of 2022, according to a Bay News 9 report.

Now the owner's children, Daniela and Elizabel Hernandez, have re-opened the food truck they have worked on since they were younger.

"I just want to make her proud and I know she's watching over us," Daniela told the news outlet.

The food truck business began as a door-to-door culinary effort.

The truck, open on Saturdays, is operating at the Oytis M. Andrews Sports Complex.
