Food truck fare goes a few steps beyond the typical

There are thousands of food trucks offering everything from burgers to hot dogs to barbecue, but ones offering locally grown produce and artisan ingredients are a bit more far and few between.

One such mobile food venue is the Golden's Truffle Pig Craft Kitchen in Medford, Oregon, according to an Ashland Tidings report.

Chef Skyler Golden and partner, Shawna Williams, are all about globally inspired menus that change as the season changes. For example spring brings a menu of leafy salads and homemade pickles.

Other menu items being offered during the year include crab cakes and seared yellowfin, as well as Nashville-style hot cauliflower street tacos, a burger with truffle-bacon jam and truffle-peppercorn mayonnaise.
