Food trucks are expanding rapidly in Fitchburg, Massachusetts, according to city food inspector Stephanie Holinko. This year, the city granted about 40 temporary licenses and nine annual ones, compared to fewer than 10 temporary and four annual food truck licenses in 2016, according to the Sentinel & Enterprise.
Holinko expects the trend to continue. Next spring, she expects to have "a ton" of applications for annual licenses.
One reason for the spike is that the city passed its first zoning amendment regarding food trucks in April, reducing the cost and wait period to operate a food truck. The second reason is River Styx Brewing, a brewery that opened in July, has become a hot spot for food trucks.
