Food truck park opens in Lafayette, Louisiana

A food truck park called Uncle Bob's Roundup has opened in downtown Lafayette, Louisiana. The park has covered tables, fans, bathrooms and a variety of food trucks, according to a report by The Advocate.

The initial opening featured Shakebacks, Ragin Casians Crossroad Cuisine, Maple Street Milkshake Bar and other food trucks. Uncle Bob's Roundup currently has five spots for food trucks and a central seating area.

Owner Dillon Van Way said the lot was initially vacant.

"I didn't want to get the lot from the city and let it just stay vacant," he said in the report. "But with inflation and rising interest rates, it became difficult to develop anything. The park started as an idea of a less costly development to activate that corner of downtown."
