Food trucks deliver a big thank you to healthcare workers

The Food Truck League, in Murray, Utah, has provided more than 1,400 meals to front-line employees at several state hospitals.

One food truck participant describes helping out as a "food hug," and the most recent food delivery took place last week with five trucks offering donated fare. The effort was spearheaded by Eddee Johanson and his wife, who own Yoshi's Japanese Grill, according to a KSLTV report.

"She [my wife] was thinking about my son-in-law, COVID counts, you know. And the nurses had been in the news getting overworked and overwhelmed. She thought, 'I'm going to go feed the nurses,'" Johanson told the news outlet.

The Food Truck League embraced the idea and other food trucks were soon joining the cause.

"With so many people struggling this year, whatever we can do to help, we really just, we want to help," Clayton Greenhalgh, owner of Silver Moon Taqueria, told the news outlet.
