Former Grand Rapids eatery returning as food truck

Those who loved dining at the Red Hot Inn, in Grand Rapids, Michigan will be happy to learn the owner is bringing back the now-closed restaurant as a food truck operation.

Owner Jim Koukios made the announcement on a Facebook post.

"Our chili is a Koukios family recipe that's been around Grand Rapids for 100 years … and I thought this was the easiest and the best way to get back into the business," he wrote.

The response has been welcomed by local residents.

Koukios is using a custom trailer for the Red Hot GR food truck business and is busy getting required inspections and paperwork done, according to a WoodTV8 report. He hopes to have it on the road come September.

"I'm excited to do this and I kind of feel like we kind of owe it to the community. I mean, the last three years I've gone around town just shopping around Meijer and people have just come up to me asking 'What are you doing next? I miss the chili dog,'" Koukios told the news outlet.
