After Fort Collins, Colorado loosened food truck regulations in 2012, the number of vendors in the city has grown rapidly, according to The Coloradoan.
The Larimer County Health Department reported that the number of mobile food vendors has grown to 177 this year alone, about 47 of which only sell only prepackaged foods.
A proposal to strengthen restrictions on where trucks can set up in the city was tabled last year.
Despite an ever-growing scene, most food truck owners agree there are more opportunities for food trucks than ever before. Thousands of people attend weekly summer food truck rallies on Tuesday evenings in Fort Collins' City Park. The FoCo Food Truck Alliance sponsors the event for free.
