Graduate students at Temple University in Philadelphia are studying food trucks and the university's history with food trucks.
The students are part of the Managing History class, according to a Temple University report, and part of the research involves interviewing campus food truck owners and operators.
The goal of the research is to document the campus food trucks and their role on campus and will include a digital walking tour. The project also involves drawing the food trucks, photography and creating maps of the areas around the various food trucks.
"Food trucks are a space of cultural exchange. What may feel like a simple 10-minute wait for a green smoothie is actually a cultural exchange," Ruthie Freer, class of 2023, a history major enrolled in this semester's Managing History class, told the news outlet. "The vendors are sharing their food and therefore values and culture with us students."
