How a horse trailer turned into a waffle food truck

It took five years to happen but Chris Brockevelt has succeeded in converting a 1974 horse trailer into a food truck.

He first saw the trailer in 2017 in Britton, South Dakota and it was his daughter who finally prompted him into action, according to a an Argus Leader report.

The Sioux Falls resident chose waffles as the prime menu item for one simple reason — it's a family favorite.

"We chose waffles because it's the only thing our family will eat without complaining," his wife, Autumn, told the news outlet. "So then over time, we just kept putting random toppings on making them better and better."

The waffle menu includes both traditional Belgian and bubble. Fan favorites include the Sweet Patootie and the Big Cheese — the latter featuring grilled cheese on a waffle with bacon, Havarti, cheddar and strawberry preserves for dipping.
