It’s all about the potato for Indiana food truck

The Spudbank food truck, serving the town of Seymour, Indiana, is a homage to the potato.

The owners, Stephenie and Laykin Eubank. launched the truck in the spring of 2022 after quitting their jobs in 2021 to open their own business, according to a report at The Tribune.

The truck's menu offers everything from specialty baked potatoes to fries and tots. It serves its fare in the lot of The Food Zone, a farmers market in Charlestown.

"I would encourage anyone thinking of starting a new business to go for it. It may just turn out better than you ever expected, and you may find yourself happier than you've ever been," Laykin Eubank told the news outlet.
