It's Roasted food truck opens restaurant in Montana

The Mexican street food truck It's Roasted will be opening a restaurant in Billings, Montana. Owners Gabriel Espino and Celeste Rocha initially sold Mexican street corn called elote and loaded baked potatoes in a tent in 2020 until moving to a trailer in 2021, according to a report by KTVQ.

The food truck serves birria tacos, elote and other Mexican foods.

"We have so many customers from California, Arizona, Texas. They're like, 'I can't buy no good Mexican food, and you guys just did that for me,' and it's just so heartwarming to hear stuff like that all the time," Rocha said in the report.

The restaurant is take-out only and offers tacos, burritos, ramen and pizzas.

"Times have changed. People are looking more to eat at home. People are looking for quality ingredients and looking for different flavors, so, that's kind of how we fit in here," Espino said in the report. "We're here for a reason, and it's just time to execute."
