Jackson, Mississippi food truck Poppy Pies opens restaurant

Poppy Pies, a pizza food truck in Jackson, Mississippi, recently opened a physical restaurant in Belhaven Town Center. The restaurant focuses on Neapolitan pizzas such as Margherita, burrata, sausage and more, according to a report by Clarion Ledger.

Poppy's is named after owner Gray Welch's daughter. The food truck will be used for festivals and private events.

"I am determined for Poppy Pies to be the place that you go to when you think about pizza," Welch said in the report. "We buy super high-quality ingredients across the board, and I want it to be the place that you'll be excited to add into your weekly rotation. We are very regularly seeing new concepts open around here in Jackson that are just so good made by good people, and I hope that folks will include us in those categories with those other great businesses … When you want pizza without compromise, that's what we want to be."

The restaurant is open from 5 to 9 p.m. Wednesday through Sunday.
