Kentucky food truck expands with physical restaurant

A food truck focused on empanadas in Prospect, Kentucky has expanded with a restaurant.

The truck enterprise, called Alchemy, which offers Latin fusion and Venezuelan fare, has opened the store in Norton Commons, according to a WLKY report.

The restaurant menu includes the truck's well-known empanadas as well as pasta, burgers and steak.

Food truck owners Nelson Michelangeli and wife Nahyla launched Alchemy as a food stall in 2019 and expanded into a food truck in 2020.

"We've basically had two good years there and everyone knows us because of the catering and home meals," Michelangeli told the news outlet. "We will continue with the food truck and everything, so we're just adding another business. We will have a very nice menu. We will have a lot of options for everyone and a nice bar."
