Maine food truck is all about shucking

The Brother Shucker food truck in Maine knows oysters. Specifically oysters on the half shell.

It's owned by Zak Kuras and one of the newest food trucks on the streets in Rockport and may just be the only fresh, raw oyster truck in the region, according to a Penobscot Bay Pilot report.

Kuras, who relocated to Maine six years ago, was an oyster farmer on the Damariscotta River and then went on to manage oyster farms. So it wasn't a great leap to decide to open a fresh oyster food truck with his brother Hudson (hence, the truck's name.)

The truck, which offers up to a dozen different kinds of oysters, can often be found at various breweries and this spring marked its first presence in Rockport.

"As we move up into Rockport, we'll source from some of the northern farms, such as North Haven," Kuras told the news outlet. "I like finding new, small farms. It's like wine varietals — you can really taste the difference in each oyster."
