Military vet debuts food truck in central Maine

Derek DeFelice, a military veteran, and his wife, Aaron, have launched a food truck in Waterville, Maine.

The truck, Hero's on Wheels, is serving up its fare at the North Street Recreation area, according to a Morning Sentinel report.

The couple had operated a restaurant in Skowhegan called Hero's House since 2018. Its closure was partially due to difficulty finding labor.

The truck is one of 668 mobile food operations in the state, according to the Maine Center for Disease Control and Prevention.

"Food trucks are up and coming right now," Derek DeFelice told the news outlet. "A lot of people I know in the restaurant business have either ordered or are trying to get a food truck right now."

"We just had a hard time finding help," Derek DeFelice told the Sentinel. "We had to make a change that was best for the business, and that's what we did. Cut our overhead down, and we've been able to survive with just me and her."
