Food trucks are expanding and diversifying into new cuisines in Minneapolis with approximately 215 now in operation, according to the Minnesota Food Truck Association. This compares to a handful of trucks that applied for licenses less than a decade ago, reported the Star Tribune.
Jess Jenkins, the association's executive director, cited the new diversity this year. In addition to the traditional burgers, brats and sandwiches, there is now a truck dedicated to tea and one devoted to pierogies.
