Mobile food cart vendors who attended a meeting at Mankato, Minnesota's Intergovernmental Center Thursday were generally satisfied with proposed regulations limiting where, when and how the trucks can do business, according to the Mankato Free Press.
Food Truck Hub developer Dain Fisher has proposed a plan to bring multiple trucks to his Old Town lot on Riverfront Drive during warm weather days. Existing rules govern only the location and hours of food trucks operating on public spaces.
The proposed ordinance establishes rules for private property such as Fisher's Food Truck Hub and other lots around the city. The proposed rules allow trucks at most locations providing operators obtain required licenses, follow food and fire safety practices, shut down by 10 p.m. and follow a few other rules.
The proposal allows trucks to be 101 feet from a restaurant, rather than 201 feet as now required on public streets.
