Missouri food truck operators take pop-up route

It's been a hard year to be a food truck operator, but several Kansas City, Missouri operators are striving to stay in business in the new year with a pop-up strategy.

KC Cajun, owned by Estra England, is just one food truck in a collaborative effort to keep business on a healthy path, according to a KSHB report.

"We've lost a lot of business, and just having some issues bringing recognition to the food truck industry," England told the news outlet. He is working with other local truck operators, including R&R Paseo Grill, to run pop-up events.
