One of the newest food options near the University of North Carolina at Chapel Hill is the Vegan Ice Cream Man.
The truck, initially launched in 2019 by Theodore Chatfield, opened near the campus this past September and is located at 102 S. Merritt Mill Road, according to a report at The Daily Tar Heel, the student newspaper.
Chatfield said his love of an ice cream truck started during his childhood in New York City and he started working early in the field, helping with his grandmother's ice push cart and then rented his first ice cream truck at the age of 16.
After running his ice cream truck in NYC he moved to Raleigh and decided to do a vegan truck.
"If I can make an ice cream that is nut free, soy free, dairy free and also loved by all, then maybe I can help some people transition into the vegan world," he told the news outlet.
