North Carolina eatery owners expand with food trucks

For nearly two decades Joseph and Debra Borsuk, a married couple in Southport, North Carolina have run a popular Italian restaurant called Joseph's Italian Bistro.

Now the couple is expanding the business with a food truck strategy.

The trucks have been busy popping up at local breweries and businesses, according to a Sun Journal report.

"It's something we're trying to do slowly, to make sure everything is right," Joseph Borsuk told the news outlet. "It's been great so far."

The food truck menu offers some restaurant favorites as well as some sandwiches including fried soft-shell crabs.
