North Iowa food truck offers up Puerto Rican fare

Eddie Carrion and his family have a specific goal in running their Mi Rincon Borinqueno food truck: to provide the best Puerto Rican fare to Iowa residents.

The truck is a repurposed bus and travels around northern Iowa offering a menu that includes everything from mofongo to tostones, according to a Globe Gazette report.

"The idea of this is to bring a little bit of the Caribbean to this side," Carrion told the news outlet..

Carrion and his wife moved to Iowa a decade ago and he initially worked for the postal service. The couple wanted to launch a restaurant but then went the mobile food truck route. But a physical restaurant may be in the future, he told the news outlet.
