The city of Springfield, Missouri has called on its food truck park to find a better way to dispose of its waste water, according to KOLR10. As a result, some food trucks plan to leave the park.
Food trucks observed by KOLR10 take the grey water to a temporary interceptor, where the grease is filtered out before it enters the city's water system.
Chris Straw, the director of building development services, said the city gave the property until the end of August to install a permanent grease interceptor.
Some truck owners said they are willing to comply with regulations, but don't want to pay for a permanent interceptor. Some said they plan to leave the park, whether or not they're required to.
