Pancake-focused food truck relocates to North Carolina

The 27 Pancakes Breakfast & Brunch food truck, well known in South Carolina, will soon be serving up its fare in Charlotte, North Carolina.

The owner and chef, Joy Eggleston-Long, moved from Columbia, South Carolina to Concord, North Carolina and is working to launch her truck in September, according to a Charlotte Observer report.

"We have something really special with this food truck, and we can't wait to share it with Charlotte," Eggleston-Long told the news outlet. "And in case you're wondering — yes, we really do have 27 flavors of pancakes. They actually taste like the flavors; it's not just a topping."

Eggleston-Long opened her food truck in January, 2020 and created her first pancake recipe just two weeks before launch, according to the news report.
