Pandemic prompts teacher to change career path

One of the latest food trucks in Hornell, New York is all about the burrito.

The Biggie's Burritos, Bowls and Tacos food truck, founded and operated by Adam Eason, reflects Eason's love for food and for interacting with people.

A teacher, Eason left the educational field when COVID-19 forced educators into virtual teaching, an experience he didn't relish as he loved classroom teaching, according to a report at The Evening Tribune.

"I just needed a change," Eason told the news oulet. "The remote learning really took a toll on me. It wasn't what I signed up for. I loved being in the classroom and teaching the kids. I loved that aspect and the pandemic stole that from me and everyone else."

He bought the food trailer in February 2021 and had it ready for operation by early summer. Eason aims to keep the truck serving food until year's end and do special events over winter months before full-time operation starting in April.
