Ramen food truck finds home in Alabama

One of the latest food trucks to hit the streets in Birmingham, Alabama is Pop Ramen, run by chefs Addison Porter and Cory Bolton.

The best friends spent two years getting the food truck up and running, according to an Alabama News Center report.

Foodies won't find plain ramen on the menu as the co-founders offer dishes that reflect an "American evolution of ramen," according to the news report.

"In the middle of COVID, we were thinking about what we were cooking at home all the time," Bolton told the news outlet. "What's something that spoke to us, and how can we translate that into a business that might have a better footing during times like COVID? That kind of came as a noodle cart, and then it kind of evolved from there."

The menu features dishes such as the Breakfast at Midnight rice bowl and the Chicken & the Egg. The latter features a double helping of noodles in lemongrass chicken broth, a wok-fried chicken leg and soy-cured egg.
