Ramen playing part in latest Denver food trend

Ramen noodles in a taco? Yes, and from media accounts it's fast becoming a foodie favorite in Denver, Colorado.

The Kiké's Red Tacos food truck, serving up fare at 3010 Speer Boulevard, is all about the birria taco featuring ramen, which is catching big foodie attention, according to a Westword report.

For those not familiar, a beef birria taco that hails from Tijuana, Mexico and features big cheese and ramen noodles and shredded beef in a spicy broth. (The traditional ingredients feature goat).

Birria ramen offers a big dose of white cheese, broth and the ramen.
