Restaurant owner pivots to food truck in time for Lent

The Fish Store food truck, in Cedar Rapids, Iowa, reflects how one bad experience can be turned into a good experience when it comes to foodservice.

Food truck operator Lenore Zoll and her family had been running a restaurant, called Boston Fish, for three decades. It closed last December due to the ongoing pandemic. But Zoll made a pivot to keep her business up and running by launching the food truck just in time for the Christian celebration of Lent, according to a KCRG.com report.

"It's amazing, makes me happy, worked really hard, know that it does mean something to the community, it means something to the people, it doesn't matter where I'm at, it's the food. that's what it's all about," Zoll told the news outlet.
