Restaurant owner to open food truck park in Colorado

Blaine Baggao, a restaurateur, plans to open a food truck park called MoonRise Garden Bar in Wheat Ridge, Colorado. The location will hold up to four food trucks including Baggao's Filipino and Mexican food truck Adobo, according to a report by The Denver Post.

"It's really the best of the best coming together, the Justice League of food trucks," Baggao said in the report. It will have both permanent and rotating trucks.

The location was previously a gas station property. Baggao chose the name MoonRise for his 8-year old daughter Olivia, who he said was like the moonlight in a dark night for him during a difficult time in his life.

"I wanted to have something I could show her that I had (her) in mind the whole time," he said.
