Foodies in San Antonio, Texas who crave the food and flavors of Puerto Rican fare can find it at the Pinch-Ito food truck that operates at the 1604 Cantina Food Truck Park.
The food truck is named in memory of co-owner Maria Mercado's son-in-law whose nickname was Ito, according to a Kens5 report.
The truck offers up crispy plantains, kabobs and corn fritters. Pinchos is the native word for meat on the stick, according to co-owner and chef Luis Santiago.
"Puerto Rican food is amazing," Santiago told the news outlet. "Around the world, every tourist that goes to Puerto Rico, they love the food. I have customers that are not just Puerto Rican, and they come back. Some people [are] coming from Houston or people [are] coming from McAllen."
