Spokane food truck leads to a restaurant

After nearly two years of operating as a food truck, the People's Waffle is now a brick-and-mortar operation in Spokane, Washington.

The truck and restaurant menu were inspired by Alyssa Agee's grandma's recipe, according to a KXLY.com report.

While many restaurants closed during the past year and a half due to COVID-19, the truck's owner wasn't deterred.

"We decided to take a leap of faith," Agee told the news outlet, and opened the restaurant this past April.

"We've certainly had our challenges. Hasn't everyone? But Spokane has been very loving to us and we appreciate that," Agee said.
