The city of Springfield, Missouri recently reached a compromise with the landlord of the city’s food truck park that will allow the trucks to comply with sanitary sewer regulations, according to the Springfield News-Leader.
Chris Straw, director of city building services, said the food trucks have expressed an interest in addressing the grease issue on an individual basis.
An internal city memo dated Oct. 10 said the trucks had been illegally dumping greasy water directly into the city sewers.
Talks began with the park's landlord, Ken Walker, in January 2016, but reached an impasse when Walker turned down the city's request that he buy and install a $15,000 central grease interceptor for the park.
Each individual food truck will now be expected to outfit itself with its own grease interceptor.
The trucks received a notice early this month that they would have to leave the property by Oct. 31.
