SUNY Schenectady to offer food truck education

SUNY Schenectady will offer a food truck in the fall that will not only provide local foodservice, but will serve as a classroom for culinary students for a certified food truck program, according to a report in The Daily Gazette.

The first class in the program will cover the basics of food truck design, construction and regulation. The second class will give students experience cooking and serving customers. The third class will teach students to develop a business plan, a menu and a chance to run the truck.

The truck has been outfitted with a six-burner oven, a convection oven, two pizza ovens, four deep fryers, a grill top, a griddle top, refrigeration, prep space and an electronic awning and speaker system.

The truck will serve and cater events around the region.
