Sushi food truck rolling out in Memphis

One of the lastest food trucks coming to Memphis, Tennessee is all about sushi.

In fact its owner's nickname refers to his love of the cuisine. Jimmy "Sushi Jim" Sinh plans to get his truck open by mid October, according to a Memphis Flyer report. Sinh had previously operated a restaurant and a food truck that both shuttered in 2018. He expects to start doing pop-up food truck events.

He has a building which will serve as the truck's headquarters and his commercial kitchen. His goal is to "keep it very simple," he told the news outlet.
