Tex Mex food trucks inspire artist’s paintings on display in Rockport, Texas

An art show at the Rockport Center for the Arts in Rockport, Texas features the work of Joe Pena, a painting professor at A&M Corpus Christi, whose work reflects his fascination with the food trucks that serve Tex-Mex cuisine, according to KRISTV in Corpus Christi, Texas.

Pena says he was making a late night taco run for his pregnant wife when he first spied a solitary food truck glowing like a beacon in the dark.

"There was a streetlight out, so the only light that was emitting from the blackness of space was just this glow from the inside of the truck," Pena said. "And from a distance, it was just this ethereal, wonderful visual element that almost looked like it was hovering in space, and since then I've just been fascinated with that."
