Texas city council revamps longtime food truck rules

The Denison City Council, in Texas, is updating food truck regulations for the first time in over four decades.

One of the first two actions slots food trucks into three categories with specific rules for each. For example, trucks in the unlimited category can cook and portion on site while the restricted category permits sale of pre-wrapped items, according to a Herald Democrat report.

The changes also boost rules regarding truck maintenance and operational guidance and the local fire department will handle inspections and testing.

"Basically, the market has shifted to where mobile vendors have become more and more prominent, and there is a lot more interest in them, especially in Denison in the last few years," Denison senior planner Bill Medina told the news outlet.
